Vegetable Tortilla Pizza for One

Ingredients

·         1 whole wheat tortilla (low-carb)

·         1 tsp extra virgin olive oil

·         ¼ tsp dried oregano

·         ¼ tsp dried rosemary

·         ¼ tsp garlic powder

·         ¾ cup roasted tomatoes, peppers, and zucchini with Italian herbs

·         ¼ cup shredded parmesan cheese

·         ¼ cup shredded low-fat mozzarella cheese

·         1 small handful arugula

Directions


1.      Heat oven to 400 F

2.      Brush the tortilla lightly with olive oil using a pastry or marinade brush. Sprinkle with oregano, rosemary, and garlic over the tortilla, and then layer the roasted vegetables across the tortilla

3.      Cover the vegetables with the Parmesan and mozzarella cheese, and top the pizza with arugula

4.      Carefully transfer the pizza directly onto the oven rack and bake it for 10 minutes, or until the cheese melts, the tortilla edges are crisp, and the arugula is wilted

5.      Carefully remove the pizza from the oven, cut it into fourths for easily handling, and enjoy.
