Clean Eating Red Vegetable Skillet

Ingredients

  • 1 large red bell pepper
  • 1 medium red onion
  • 2 tsp. oil
  • 2 large chicken breasts (about 7 oz. each), cut into bite-sized chunks
  • 2 tsp. garlic powder
  • 2 tsp. dried parsley
  • 2 tsp. dried basil
  • 1 cup cherry tomatoes, halved

Instructions

1. In a skillet, saute the bell peppers and onions until soft.

2. Add the chicken and remaining spices, and cook completely (approximately 15 minutes, depending on the size of your chicken chunks).

3. Stir in the tomatoes and season with salt and pepper to taste.
