Virtually Fat Free Delicious Banana Bread

Ingredients

  • 1-1/2 C All-purpose flour

  • ¾ C Splenda

  • 1-1/4 tsp. baking powder

  • ½ teaspoon ground cinnamon

  • 2 egg whites or 2 TBSP chia seeds mixed with 6 TBSP water and allowed to stand 20 minutes

  • 1 C. mashed banana

  • ¼ cup applesauce

Directions

Preheat oven to 350-degreees. Lightly grease 8/4 pan. In a large bowl, stir together flour, splenda, baking powder, baking soda and cinnamon. Add egg whites (or chia seed mixture), banana and applesauce; stir just until combined. Pour batter into prepared pan. Bake in preheated oven for 30 to 40 minutes, until a toothpick inserted into center of loaf comes out clean. Turn out onto wire rack and allow to cool before slicing.
