Banana Chia Seed Bread
Ingredients
- ¼ C. unsweetened applesauce
- 3 large, ripe bananas
- ½ C agave nectar (or ¾ C Splenda)
- ½ C all-purpose flour
- 1 t. baking soda
- 1 t. baking powder
- ½ t. kosher salt
- ¼ C. chia seeds
- ¼ C. water
Directions
- Heat the oven to 350 degrees and spray either 10x 3 round pan or a 5 x 9 loaf pan with baking spray.
- Peel the bananas and in a large mixing bowl, mash them well with a fork.
- Mix the chia seeds with water. Stir in the sugar, applesauce and then the chia seeds. Mix thoroughly.
- Mix together the flour, baking soda, baking powder, and salt in a separate bowl.
- Slowly fold the dry ingredients gently into the wet, mixing just until you no longer see any streaks of flour or dry ingredients. Try not to over-mix.
- Pour the batter into the prepared pan and bake for 45 minutes, until a toothpick inserted into the middle of the load comes out clean and the bread starts to come away from the sides of the pan.
- Cool in the pan on a rack for 5 minutes. If you use Agave nectar, add 2 TBSP cornstarch to the recipe (this is not necessary with the Splenda).
