Banana Chia Seed Bread

Ingredients

  • ¼ C. unsweetened applesauce
  • 3 large, ripe bananas
  • ½ C agave nectar (or ¾ C Splenda)
  • ½ C all-purpose flour
  • 1 t. baking soda
  • 1 t. baking powder
  • ½ t. kosher salt
  • ¼ C. chia seeds
  • ¼ C. water

Directions

  1. Heat the oven to 350 degrees and spray either 10x 3 round pan or a 5 x 9 loaf pan with baking spray. 
  2. Peel the bananas and in a large mixing bowl, mash them well with a fork.
  3. Mix the chia seeds with water. Stir in the sugar, applesauce and then the chia seeds. Mix thoroughly.
  4. Mix together the flour, baking soda, baking powder, and salt in a separate bowl.
  5. Slowly fold the dry ingredients gently into the wet, mixing just until you no longer see any streaks of flour or dry ingredients. Try not to over-mix.
  6. Pour the batter into the prepared pan and bake for 45 minutes, until a toothpick inserted into the middle of the load comes out clean and the bread starts to come away from the sides of the pan.
  7. Cool in the pan on a rack for 5 minutes. If you use Agave nectar, add 2 TBSP cornstarch to the recipe (this is not necessary with the Splenda).
