Slow Cooker Buffalo Turkey Meatballs

Prep and Cook Time: 2 hours and 20 minutes

This recipe serves 6

Ingredients

1¼ pound ground turkey (85% lean)
1 large egg
⅓ cup almond flour
½ tsp. garlic powder
½ tsp. onion powder
¼ tsp. dried oregano
Kosher salt and black pepper
3/4 cup Franks Red Hot sauce
2 stalks celery, thinly shaved
1 Tbsp. minced chives

Directions

1.       In a large bowl, combine ground turkey, egg, almond flour, garlic powder, onion powder, and oregano. Season generously with salt and pepper. Using a spoon or clean hands, mix until combined. Roll the mixture into 1½-inch balls. (You should have about 24.)

2.       Transfer meatballs to a medium pan over medium heat and brown on all sides, working in batches if necessary. (If you are using an InstantPot, you can use the sauté function for this step.)

3.       Transfer browned meatballs to slow cooker. Stir in Franks Red Hot Sauce until well combined.

4.       Cover and cook meatballs on low heat for 2 hours.

5.       Transfer to a platter and garnish with celery and chives.
