Quinoa Pizza Bites

Ingredients


    2 cups cooked quinoa
    2 eggs
    1 tsp onion powder
    1 tsp garlic (minced or paste)
    1 cup pepperoni
    1 cup mozzarella cheese
    1 tsp hot sauce

Directions

  1. Preheat oven to 350 degrees
  2. Combine all ingredients
  3. Grease mini muffin pan and place 1 heaping tablespoon of the mixture into each cavity
  4. Press down to compact the mixture and remove any air
  5. Bake for 15-20 minutes until the edges are golden brown and cooked through
  6. Remove from the muffin tin and serve with marinara dipping sauce
  7. Makes 24 mini pizza bites
  8. Note: For kids, consider reducing hot sauce to ½ tsp
