Healthy Egg Nog
Ingredients
- 2 cups unsweetened almond milk
- 3 egg whites
- 1/3 cup honey
- 1 t vanilla extract
- 1/2 teaspoon nutmeg
- 1/2 teaspoon cinnamon + extra to sprinkle on top
Instructions
- Place all ingredients in a blender and blend 2-3 minutes (or use hand held).
- Pour eggnog into a pot and warm over medium-low heat for 15 minutes to cook the egg. Get the mixture hot, but do NOT BOIL. When the mixture wants to simmer- whisk constantly to avoid it.
- Remove from heat and place in refrigerator to cool
- Chill overnight
- When it is cold it will becomes thick. Blend with a whisk. If mixture is too thick, simply add a bit more milk until you reach the consistency you like.
- Pour into cups and sprinkle with cinnamon.
