Clean Eating Healthy Egg Nog

Ingredients

  • 2 cups unsweetened almond milk
  • 3 egg whites
  • 1/3 cup honey
  • 1 t vanilla extract
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon + extra to sprinkle on top

Instructions

  1. Place all ingredients in a blender and blend 2-3 minutes (or use hand held).
  2. Pour eggnog into a pot and warm over medium-low heat for 15 minutes to cook the egg. Get the mixture hot, but do NOT BOIL. When the mixture wants to simmer- whisk constantly to avoid it.
  3. Remove from heat and place in refrigerator to cool
  4. Chill overnight
  5. When it is cold it will becomes thick. Blend with a whisk. If mixture is too thick, simply add a bit more milk until you reach the consistency you like.
  6. Pour into cups and sprinkle with cinnamon.
